OUR PORK
Pigs are native to the hardwood forests of Eurasia; there is a growing movement to return to more traditional methods of pork production for the benefit of the animals, humans and the planet. A Majestic Grove of Oaks, Hickory, Beech, Cherry, and Maples trees is where our pigs openly roam and feast on the acorns and other nuts that fall from the mature forest canopy, as well as wild grapes, grubs and native plants. As they turn the soil like mini tractors, we seed behind them kale, turnips, grasses and clover and supplement their diet with GMO-free feed grown right here in WNY. To maintain fresh forage and to help you commit to sustainable, clean eating, we rotate them through these wooded pastures and follow with chickens to maintain soil vitality, which reduces the impact on the land and keeps their environment and them clean and healthy. This activity, low stress, and excellent diet is what contributes so strongly to the dark red color of our meat, deep marbling, and most rewarding, the incredible flavor we’ve become known for!

Ham Edition: Roughly a 10-lb skin-on fresh ham or smoked ham.
Please note, smoking reduces ham weight by about 3 pounds
Roast Edition: Fresh shoulder/butt roast, spare ribs and a bit more sausage than the ham edition. Perfect for pulled pork or smaller families

Smoking Options
When you purchase a whole or half hog you can choose exactly which cuts you’d like to smoke. Including, Bacon (vs. Belly), Hams, Ham hocks and roasts.

Sausage & Ground
We offer a variety of flavors that can be made into links or left as ground. Kielbasa only comes in rope.

Remainder of Purchases due at Pickup. Deposits are non-refundable and help us to pay for processing and transport.

What is Hanging Weight?
Whole and half hogs are priced upon hanging weight. Hanging weight is the weight of the animal once the organs, skin and blood are removed. Typical hanging weight of our hogs is 190-230 pounds, averaging 215 Pounds. You may request a larger or smaller hog,

All of the animal is consumable from tail to snout at hanging weight, and we encourage you to take what you think you may use. If you’re not sure, here are some ideas…
- Bones for broth, tongue for tacos, organs for soups or your pets (great in minerals), smoked ears for the pups

- We are a seasonal operation, to keep our piggies happy and healthy we only raise them in the outdoors
This means we only keep them in the spring, summer, and autumn months
- Thanks to your support, we are now able to reserve a few pigs for retail. This means you can get our pork year-round, or at least until it sells out!
